She didn't say how much, though. One of my books ("200 Easy Homemade Cheese Recipes, by Debra Amrein-Boyes) says to use 1 drop of rennet in a gallon of milk for chevre. It would be a lot harder to figure this out with rennet tablets, I have only used liquid rennet. I ...Do you have a picture of the finished product? I tried making Chevre last year and it had a decent flavor but was really grainy, almost like really fine curd cottage cheese. Did I drain it for too long? I'd love to see a photo of some Chevre that has drained long enough and is ready to take out of the cheesecloth!
